Filed under: Food, Green challengeThis month's challenge is kicking my butt harder than I thought it would. One commenter mentioned the difficulty of switching to a locavore diet with kids. I have to give her props for trying because although my three-year-old is a great eater, I would not be successful in getting her to eat only local foods for three meals a day without more preparation and bettering my cooking skills -- oh, and a straight jacket.That said, we are surviving. I've upped my once-a-week visit to the Farmer's Market to two just in case there are additional offerings later in the week. The eggplant is simply divine this time a year, a vegetable that I rarely use has become the staple in many dishes.I've been looking over cookbooks to help me with my shopping and I've found a couple that I really like as well as a few authors who have tried eating locally and lived to tell the tale.
